Skillet Scrambler
This is a great low calorie (207 in the whole thing) breakfast that is filled with wonderful, satisfying flavors. It is easy to make and everyone can enjoy something from this combination. My kids tend to like just the eggs and sausage with some added cheese. They also like when I pile there breakfast up on a bun or biscuit and they can have a homemade egg, sausage and cheese biscuit. How ever you make your families meal you will be able to make a great and healthy one for yourself also.
1 egg
1 sausage link (I used Little Sizzlers)
1/2 large red pepper
1 small onion
1 c. raw broccoli
Cook your sausage ahead of time, cut into pieces and drain on paper towel. Cut your veggies into bite sized pieces. Place veggies in a non-stick skillet with some water in the bottom. Cover and steam until desired tenderness. Push the veggies to one side of the pan and add cut sausage to keep warm. Crack your egg in other half of the pan to cook. Break your yolk and cook fully, using your turner to scramble your egg. Just before removing from the heat stir your skillet meal together. Serve hot and enjoy!
